FR. CHARLES' COOKING CLASS




GHANA MIXED VEGETABLE STEW/SAUCE

INGREDIENTS:
2 23oz pkgs Stouffer’s garlic chicken skillet.
3 onions chopped large pieces
2.5 lbs chicken wing sections
Vegetable oil
8 0z tomato sauce
8 oz tomato paste
2 onion cakes, bullion or 1 tblsp heaping lipton onion soup & dip mix
1 tsp each of cayenne, seasoned salt, garlic salt, garlic powder, Mrs. Dash Extra Spicy

COOK:

½ 5lb bag of chicken wing sections with 1/3 of the chopped onions in water to cover chicken.
In ½ inch vegetable oil in large stew pot - add remaining onions when oil is hot and cook until onions are lightly browned.
Cook the Stouffer’s garlic chicken skillet in the microwave according to package directions.
Then add the tomato paste and tomato sauce stirring constantly till mixed well. Add the cayenne and garlic powder.
Add 1 tsp Mrs. Dash Extra Spicy to boiling chicken.
"Salt friends", the seasonings containing salt, are added later so they do not overwhelm.
The onion mixture is very thick now. Add the Stouffer’s mixture stirring well. Using the tomato sauce can as a measure, add ½ of the can of chicken broth. Then use the tomato paste can as a measure and add 2/3 of the can of chicken broth stirring well.
Simmer over medium high heat for a few minutes.
Introduce chicken when done directly to other mixture with onions and stir while adding.
Add the garlic salt and seasoned salt.
Serves 6-8.
To prepare as a sauce omit Stouffer’s and chicken. Adjust seasoning to taste.

Fr. Charles cooked this for us. The stew was very good. I have since tried the recipe at home with great success.
